I have over 40 years' cooking experience and an extensive knowledge of many cuisines.

I have an insatiable curiosity about food and its intersection with culture, agriculture, and politics.

If it stands still long enough, I will ferment it! Kraut? Naturally. Japanese Natto? You bet. Indian Dosa batter? Absolutely!

Cheese is my weakness: the riper and stinkier, the better!

I am not afraid of the ugly bits! I grew up on liver, kidney, heart, tongue, etc. and I know how to make them delicious.

I have a huge garden and grow everything from figs to sweet potatoes. Yes, in Canada!
